I don't have a great recipe, but I generally trust Serious Eats. I tried their recipe, and the steaks turned out great - the sauce was good, but not outstanding: https://www.seriouseats.com/steak-au-poivre.

Thanks for commenting, and for the link! I like Serious Eats, too. And that recipe brings up an important point, one that I'll address in a future post: searing the meat successfully because one side isn't encrusted in pepper. Thank you, and more on Steak au poivre is coming soon!
